For 100% Compliance: Measuring Utensil Guide Information (2/26/20)
Using proper measuring utensils not only ensures that we are building our menu items to spec to create a consistent product across the brand, but it also ensures that we are staying within the variance allowed for nutritional calculations we have performed on our menu items. Utensil usage will also guarantee consistency with the cost of goods.
Changing habits and achieving 100% usage on utensils will take the entire management support. The kitchen staff will be slowed down just enough to ensure a perfect pizza, salad, pasta, or appetizer.
Here is a chart for you to print and laminate as a guide for which items need utensils. There are obviously some items not listed on here. The reason that some items may not be listed is that there are multiple measurements for an item that didn't allow for 1 utensil to work for all builds, and some items are challenging to place in a measuring spoon. At the bottom of the chart is a summary of which items need to be at each station. This guide is helpful for the PM Dishwasher to place back in a bowl on the lines at the end of the night. This routine will assist in the AM staff getting properly set up.
